Watermelon Chia Pudding with Mojito Cashew Cream

We start with local watermelons from S.E. Daugherty & Sons in Nashville, remove the seeds and puree the watermelon until it becomes a refreshing juice. Then we add chia seeds for a hydrating, high-fiber (one jar has 56% daily value) breakfast. To add protein, the pudding is topped with cashew cream seasoned with lime & local mint.
