Socca with Ratatouille, Whipped Feta & Sausage
You will make easy socca "pizzas" with chickpea flour in the same way you would make pancakes. Then, top it with whipped feta, roasted ratatouille (prepared for you), and basil. The ratatouille is made with all the peak vegetables of the season: tomatoes, sweet peppers, eggplant, zucchini, local, pastured sausage, garlic, and onion.
