Socca with Ratatouille & Whipped Feta


This is our new favorite! You will make easy socca "pizzas" with chickpea flour in the same way you would make pancakes. Then, top it with whipped feta, roasted ratatouille (prepared for you), and basil. The ratatouille is made with all the peak vegetables of the season: tomatoes, sweet peppers, eggplant, zucchini, garlic, and onion.

Ratatouille: Basil, tomato, zucchini, summer squash, eggplant, Bell Pepper, onion, Garlic, Balsamic Vinegar, black pepper, pink Himalayan salt, Extra Virgin Olive Oil

Chickpea Flour for Socca: Chickpea Flour

Whipped Feta: Feta (goat's milk), cream cheese, lemon juice, extra virgin olive oil

Side Salad: lettuce, Carrots, cabbage, dressing (blackberries, peaches, lemon juice, agave, sunflower oil, salt, pepper, thyme)
