Socca with Ratatouille & Whipped Feta

A Dinner Belle favorite! You will make easy socca "pizzas" with chickpea flour in the same way you would make pancakes. Then, top them with whipped feta, roasted ratatouille (prepared for you), and basil. The ratatouille is made with all the peak vegetables of the season: tomatoes, sweet peppers, eggplant, zucchini, garlic, and onion.

Ratatouille: Basil, tomato, zucchini, summer squash, eggplant, Bell Pepper, onion, Garlic, Balsamic Vinegar, black pepper, pink Himalayan salt, Organic Extra Virgin Olive Oil

Chickpea Flour for Socca: Chickpea Flour

Whipped Feta: Feta (goat's milk), cream cheese, lemon juice, extra virgin olive oil

Side Salad with Balsamic Vinaigrette: Seasonal salad greens, cabbage, Carrots, Balsamic Vinaigrette (balsamic vinegar, avocado oil and/or olive oil, agave nectar, dijon mustard, garlic, pink himalayan salt, black pepper)
