Beet Lentil Soup with Cardamom

In the middle of the holidays, we want a clean soup that's still festive to balance all the decadence. This soup is a lovely shade of red from the beets and full of protein and fiber from the lentils. Caramelized onion adds depth of flavor alongside the sweet cardamom.
